Masala Dosa
Masala Dosa the most popular breakfast in south India. It's th King of all Dosas. I used to like the potato stuffing made in hotels but never knew how to make it. The most popular in udipi hotels. what is the best one to feature in udipi cusine.
Ingredients:
Dosa:
urad dal - 1cup
rice - 2cups
poha - 1/4 cup or a fistful
Stuffing:
potato - 1 (boiled )
onions -1(big) sliced thinly
ginger - 1 inch chopped
green chillies - 2
salt to taste
seasoning:
oil - 1tsp
red chillies- 1
mustard seeds - 1/2 tsp
urad dal - 1tsp
chana dal - 1tbsp
asafetida - 2 pinch
turmeric - 1 pinch
curry leaves - 4 or 5
Method:
1. Heat oil in a pan, add the seasoning let them roast till they turn golden brown.
2. Now add ginger and asafetida and turmeric, green chillies ,onions. let them cook when the onions become soft add boiled potatoes don't add the water.add salt as required.
3.cook for a minute and remove from heat.
P.S: Boil potatoes in salt water.
Dosa Batter:
1. Soak all the dosa ingredients for 6 hrs.
2.In a mixer or grinder make a smooth batter. to ferment the batter let it rest for 8 hrs.
3.Now add salt to the batter.
Making dosa:
1.Take a flat bottomed pan and pour a laddle ful of batter on it and spread the batter in circles as a thin sheet.
2.Spray oil on the edges and increase the heat and let it stay till it turns golden brown.
3. Place a 4 tbsp full of Potato stuffing in the center and remove from heat.
Enjoy your Masala dosa with Peanut or coconut chutney.

Gobi Manchurian
In India Manchurians became so popular you can find it anywhere. I first had it in my teens and still hooked to it.Now i know how to prepare it. I can enjoy it anytime.Indo-Chinese cuisine became a part of India.
My hubby has a potluck in his office and we zeroed on Gobi manchurian so i made it. The best part is i won in the appetizers section and got 25$ gift card to watch movies.
So i want to share this recipe with you.
Ingredients:
Cauliflower, cut into florets.................. 1 bowl
Oil for deep frying
Salt to taste
For Batter:
1tbsp Refined flour/maida
1 cup Cornflour
1 tsp dry Red Chilli Powder
1/2 tsp Ginger-Garlic Paste
1/2 tsp chatmasala
1/2 tsp garam masala Salt to taste
For Sauce:
Spring Onions, thinly sliced - 1 bunch (Keep greens separated from white)
Onion- 1cup
Capsicum/Bell pepper, diced - 1cup Ginger, chopped finely or grated - 1 inch
large cloves Garlic - 4 chopped finely
Green chillies, finely chopped - 3(adjust to spice level)
Tomato Sauce - 4tbsp(I used Maggi Hot & Sweet, Tomato Ketchup)
Soya Sauce - 1tbsp
Sweet Chilli Sauce - 1tbsp(Optional)
Method:
Prepare Batter and Deep Frying:
1.Wash the cauliflower florets in water with a little salt dissolved in it.
2.Make a little thick batter with cornflour and all purpose flour dissolved in water. Mix in red chilli powder, ginger-garlic paste and spices ,salt to taste.
3.Coat the florets with the batter and deep fry at medium flame till they turns golden brown.
4.Drain them in paper towel to remove excess oil.
Preparing the Base Sauce:
1.In a pan take little oil and fry chopped garlic and chillies for a minute on medium heat.
2.To this add whites of spring onions, ginger and capsicum and saute till onions turn translucent, about 2-3 mins.(donot over cook)
3.Add tomato sauce, sweet chilli sauce and soya sauce(if you want it more spicier add chilli sauce)and stir well. Turn off the flame and keep it aside.
4.Add the fried cauliflower florets with the sauce just before serving and mix well.
Garnish them with chopped coriander leaves and greens of spring onion and serve hot.

Onion Samosa
My favorite indian snack. easy to make. and u wont go wrong. The days of college we never had restrictions for samosa's 2 or 3(parents never knew) uhhhh......good old days. No need to count on calories and oily stuff. So i baked my samosas and they turned out well.
Ingredients:
onions...............2
green peas........1 cup
cilantro.............1 cup
spring roll wraps..............1 pack
garam masala.......1/2 tsp
amchur powder....1/2 tsp
chat masala..........1/4 tsp
Method:
Stuffing:
1. Add oil to a pan and add onions and saute them.
2. Now add green peas and spices and salt.
3. Saute adding cilantro and remove from heat.
4. Let it cool.
Preparing:
1.Take the spring roll wrap or samosa rap.Fold it like a cone and stuff the filling and close with water or maida paste.
2.Take oil in a pan and start frying or u can bake them I have baked mine and they are good.
3. For baking them preheat the oven to 350 F and place them on an aluminum foil and bake till they turn golden brown approximately 10-15 mins.
Have ur samosas with Hot Hot Chai(Tea)
